Guacomole is an easy recipe and actually chalk full of great fats. The avocados are a wonderful source of fat, the onions and garlic are great sources of anti-inflammatory compounds. When I made guacomole this time I used it as a garnish for the Tortilla-Less Chicken soup. It worked out very well. Highlighted links are to products I use 🙂
3 avocados (these do not have to be organic, the thick skin protects the flesh inside)
1 or 2 shallots (I used white onion this time, but the shallots are the best)
1 bulb or garlic
Chili Pepper to tast
Salt and Pepper to taste
Cut your lime in half
Mince your shallots and place in a small bowl. Squeeze juice from half of the lime over the shallot. Add a pinch of salt and let it sit and soak. This takes a bit of the bite out of the shallot. Let the mixture soak for at least 10 minutes.
Separate, peel and pit the avocados. Mash half of the avocados in a bowl. Dice the other half of the avocados and set aside.
Stir in the lime juice and shallots into the mashed avocados. After this is throughly incorporated, add in the diced avocados.
Add spices to your mix to your taste.
