Garlic and ginger shrimp stir fry is another one of my girls favorites. When asked what they want to eat, several times a month they will pick this. Eliana will pick this one a lot. It is super simple and crazy easy to make. It takes longer to chop up the veggies than anything. All you need is a skillet or wok a couple of different oils and some of your favorite seasonings and voila, complete meal. So here is what I used:

Ingredients:

Ingredients

1 tablespoons soy sauce (I used the REAL soy sauce that is fermented. It is in a blue bottle. But one can use Tamari also)

1 tablespoon fish sauce 
handful fresh cilantro, chopped

1/2 pound shrimp, peeled and deveined (tails left intact optional)

1 Chicken Breast (optional and I had already grilled it)

1 tablespoon cooking oil, divided (I used seasame seed oil and threw in some rice wine vinegar to taste)

5 stalks green onion, chopped (white and light green parts)

2 garlic cloves, finely minced

2 teaspoons fresh ginger, finely minced or grated

1/2 Head Green Cabbage cut in strips

1/2 Head of Purple cabbage

 

Instructions:

[Sauce]
In a small bowl, fish sauce, soy sauce and cilantro and set aside. This time I used rice wine vinegar, soy sauce and seasame oil.

[Protein]
In a wok or large saute pan over high heat, add half the cooking oil and swirl to coat the bottom of the pan. When the wok is very hot, add the shrimp in a single layer and cook partially until one side is seared brown, about 1 minute. Flip and sear the other side of each shrimp, about one more minute. They don’t need to be cooked all the way through yet. Remove them to a plate or bowl and set aside. I also added chicken I had previously prepared. Add the chicken and do the same, just brown it a bit.Proteins

[Veggies]
Turn the heat down to medium and let wok cool off a bit to prevent the aromatics from burning. Add cabbage and stir fry for 5 min or until the cabbage turns and is limp. Add the remaining cooking oil and add green onion, garlic and ginger and stir fry for a minute until fragrant.

[Combine and Complete]
Pour in the sauce mixture and add the shrimp back into the pan. Stir fry for another minute until shrimp is cooked through. Serve immediately.
